Abstract

It has been developed a model for predicting fermentation musts viscosity with high solids concentration as a function of temperature, from own experimental data. For its determination it has worked with samples of musts with solids concentration of 30% p/p, obtained from a real process of industrial scale. For measurement it was used a rotational viscometer calibrated properly, generating a population of twenty five data, each of which was determined as the average of ten measurements made for each temperature, comprising operating range between 30 and 90°C. With this information it was proposed a correlation that responds to a Pade approximant of type (1,1). The model has an absolute average error of 2.5% and 0.97 R2a, is simple and easy to apply and has been used to design chillers of the process considered proving its validity.
