Estudios de Evaluación Sensorial y Vida Útil de la Tilapia Nilotica (Oreochromis niloticus) para la Obtención de un Producto de Máxima Calidad Cultivada en Ambientes Antropizados del Sudeste Bonaerense

In this paper we develop the methodology of Quality Index for the first time in the country with Oreochromisniloticus produced by aquaculture in flooded quarries, mining product. The fattening of this freshwater specie was carried out in floating cages in the water body of the quarry Paso de Piedra, for 160 days, with an average growth of 500g. He took a sample of 50 individuals for sensory analysis six trained panelists, evaluating their useful life and developing the organoleptic characterization in state fresh gutted integer. The evaluation panel found a soft and pleasant taste, firm texture, with a slow and progressive deterioration; establishing the acceptable maximum for consumption in the order of 15 days of refrigerated storage. The size of fish harvested and it´s sensory analysis confirms that in these culture conditions, the organoleptic properties are optimal and necessary for commercialization
