Abstract

The objective of this work is the analysis of added value and improvement of the productive system of a company dedicated to the production of healthy foods in the city of Mar del Plata. As a first step, an analysis of the value chain and the current production system is carried out using process maps and flow charts. Then, the value-added analysis of the activities of the productive system is carried out to specifically determine the value contribution of each one. The activities that contribute to the needs or requirements of the interested parties and the organization are identified and opportunities for improvement are detected to eliminate those that do not generate value and reduce those that cannot be eliminated. The proposed improvements have allowed an average 10% increase in activities that add value to the client and the organization, which in terms of time implies an average reduction of 15% in activities that do not generate value.
