Abstract

In the fruit and vegetable chain of La Plata, approximately 42,000 tons of food losses are generated every year, which could help improve the food conditions of a large percentage of the region's inhabitants. Although the recovery of these foods is complex due to a multiplicity of factors, among them, the logistical management of the rescue, and the useful life of the food to be delivered, a substantial factor to consider given the probable loss of properties and nutrients, it is has been able to advance in the installation of a vegetable medallion production plant on the property of the La Plata Food Bank. This work demonstrates how, based on the recovery of part of the aforementioned food losses and after a tight analysis of the technical and economic feasibility of its production, it has been possible to install a production plant for 124 soup kitchens. the city of La Plata. The proposed business model has allowed us to provide economic sustainability and the possibility of scaling production.
